Course Content
This module provide learners with a basic understanding of front office procedures in the hospitality industry. Learners will understand, organize, perform and evaluate front office functions that are critical to the success of a hotel. Students will be trained in the importance of guest service, along with any technical aspects of front office management.
This course provides learners with an introduction to the food and beverage services and operations. It offers a historical background of the development of food and beverage services, their operations and management phases, such as product devilment, production, equipping and staffing, events and performance.
This course provides learners the role of the housekeeping department in hotel operations, and explain the importance of effective communication between housekeeping, the front office and the engineering and maintenance division.Identify typical cleaning responsibilities of the housekeeping department, and explain how area inventory lists, frequency schedules, performance standards and productivity standards are used to plan and organize the housekeeping department. Techniques to develop and improve human resource skills in areas of training, scheduling, motivating, and disciplining. Techniques addressed include implementing the four-step training method, developing a staffing guide, adopting alternative scheduling methods, motivating the housekeeping staff, and administering a formal disciplinary action program. Understand the managerial skills necessary to efficiently operate an on-premises laundry operation (OPL). Skills addressed included planning the physical layout of an on-premises laundry operation, developing procedures for laundering different fabrics, organizing the flow of linens through the laundering process, operating typical machines and equipment used in laundry operations, and staffing the OPL.
The learner will know about the attitude and behavior which needs to be followed in a kitchen, personal hygiene and its importance in the kitchen, uniform and protective clothing, identification of knives and how to sharpen them, setting up the work station, menu planning, etc.
